🥦Broccoli-Cheddar Frittata + Fruit prep🧀
Frittatas are one of my favorite breakfast preps because they are so easy and satisfying. This one tastes like a broccoli cheddar casserole in frittata form. .
(GF, vegetarian, 30-35 minutes, 4 servings)
1/2 c. milk
1 tsp. minced garlic
salt and pepper, to taste
1 c. frozen prepared hash browns, defrosted
1 c. frozen broccoli, defrosted and finely chopped
1/2 c. (2 oz.) shredded cheddar
4 servings fruit (I used cherries and cantaloupe)
1. Preheat the oven to 425 degrees and spray an 8 inch baking dish with non-stick spray.
2. In a large bowl, whisk together the eggs and milk and stir in the remaining ingredients. Pour into the baking dish and bake 20-25 minutes until the edges are browned and the middle is set. Let cool and add to containers along with fruit. .
~Storage: 4-5 days.
~Freezer: 😀 (Without fruit). Although there are some texture changes when freezing eggs, the additional ingredients in this make the changes less noticeable.
